today was such a hot day, it was difficult to move around. cooking is near impossible in sweltering heat! for me at least. for lunch i had subway (eat fresh eh?), and it was tasty... always simple yet satisfying. not to mention convenient!

after cleaning and showering, i finally got some garlic-herb focaccia going in the oven. such a simple yeast bread! perfect for breadsticks, sandwiches, or in toast form alongside pasta. or, on its own. you can find the recipe here. so easy and so versatile. i chose to add minced garlic to the dough, and topped it with oregano, basil, black pepper, and onion powder.

seeking a quick dinner, i cut myself a square, split it in half, and built an impromptu greek veggie sandwich.

plain greek yogurt, spinach leaves, fresh tomato, sun-dried tomato, red onion, feta cheese all stuffed into warm garlic-herb focaccia bread.

again.... simple, yet satisfying. of course if i had black olives, cucumbers, or pepperoncini on hand i would have tossed them in as well. maybe a drizzle of red wine vinegar

ps: once again, as a dead giveaway to the amateur nature of my "food blogging", i hastily snapped a picture after indulging in not one... but several, bites. ehhhh woops
