the stuff i used to be afraid of! the dining hall would always serve it for the vegans and it looked so weird i would always stay away.

after doing some research however, i realized it might be worth a shot. described as chewy, slightly nutty, and one of the few plant foods that are a complete protein (all essential amino acids for humans).

it's so good! i kept eating bites of it plain, i love the texture. i've heard it's good for breakfast too, with fruit and honey and such.

it cooks just like rice and reminds me of couscous... so if you haven't tried this grain yet, give it a chance! you will not be disappointed.

i ate so quickly that i got hiccups!

white quinoa with red onion, avocado, red bell pepper, baby spinach. tossed with olive oil, lemon, salt/pepper.
